Tilapia has so many benefits for you during your ovulatory phase. Paring tilapia with quinoa and some vegetables makes for the perfect meal for ovulation.
For this phase, some ideal vegetables to pair with this meal are brussels sprouts, asparagus, and bell peppers.
Ingredients
- 2 tilapia fillet
- 1c quinoa
- 2c vegetable broth
- 1c your favorite vegetable
- 2 Tbs olive oil
- Salt & pepper
- zesty lemon seasoning
Directions
- Set oven to 350. Cut your vegetables however you choose, drizzle with oil, salt, and pepper. Bake for 20 minutes or until tender.
- Combine the 2c vegetable broth and 1c quinoa in a saucepan and bring to a boil. Once boiling, let simmer for 15 minutes or until fully cooked.
- Ensure your tilapia is fully thawed, not frozen. Season to taste with salt, pepper, and lemon seasoning. Drizzle oil onto the pan and cook on both sides until internal temp is 145F
- Combine all on a plate and enjoy!
