Ingredients
- 4 mini pumpkins
- 1 tsp olive oil
- 1 yellow onion diced
- 2 tsp garlic
- 1 c mozzarella
- 1 lb turkey sausage
- Salt and pepper to taste
Directions
- Preheat oven to 375
- Heat olive oil in a saucepan over medium heat. Add onion and garlic and cook for 2 minutes, then add in sausage. cooked until browned. Add cheese and set aside.
- Cut tops off of pumpkins, remove seeds, season with salt and pepper and bake for 15 minute.
- After the initial 15 minutes, stuff pumpkin with cooked sausage and rebake for 15 more minutes.
