Ingredients
- 1 cup cooked shrimp
- 1 cucumber
- 1 cup brown rice
- 2 cup water
- 1 tablespoon minced garlic
- 1 tablespoon olive oil
- 1 teaspoon sesame seeds
- siracha mayo
Directions
- Pour 1 cup rice and 2 cups water into a medium-sized saucepan. bring to a boil and simmer with the lid on.
- While rice is cooking cut your cucumber in half longwise. scoop out the seeds and set the cucumber aside.
- Toss in your pre-cooked shrimp and garlic with your rice to heat the shrimp.
- Once the rice is cooked, stuff rice into your cucumber and top with shrimp. Sprinkle on sesame seeds and top with siracha mayo.
