Ingredients

  • 1 cup cooked shrimp
  • 1 cucumber
  • 1 cup brown rice
  • 2 cup water
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 1 teaspoon sesame seeds
  • siracha mayo

Directions

  • Pour 1 cup rice and 2 cups water into a medium-sized saucepan. bring to a boil and simmer with the lid on.
  • While rice is cooking cut your cucumber in half longwise. scoop out the seeds and set the cucumber aside.
  • Toss in your pre-cooked shrimp and garlic with your rice to heat the shrimp.
  • Once the rice is cooked, stuff rice into your cucumber and top with shrimp. Sprinkle on sesame seeds and top with siracha mayo.
