Tips

  • Add cream to get the desired thickness.
  • If using fresh pumpkin, use raw and  use 2 lb to replace the 2 cups

Benefits

Pumpkin is a superfood that is full of iron zinc, and fiber. It may help boost immunity and your metabolic health. It is also full of B vitamins which are known to help boost progesterone levels.

Ingredients

  • 1 teaspoon butter
  • 1 onion diced
  • 1 carrot peeled and chopped
  • 1 sweet potato peeled and chopped
  • 2 c pumpkin puree
  • 5 c water
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ginger
  • salt and pepper to taste

Directions

  1. Melt butter in a large stock pot.
  2. Add vegetables in with melted butter. Mix in butter for 2 minutes.
  3. Add seasonings into stock pot and mix up vegetables; cook for 4 minutes.
  4. Add water to stock pot, bring to boil, and the simmer for 15 minutes.
  5. Remove from heat and let cool. Once cooled add to blender. Serve and enjoy!
