Ingredients
- 1 teaspoon butter
- 1 onion diced
- 1 carrot peeled and chopped
- 1 sweet potato peeled and chopped
- 2 c pumpkin puree
- 5 c water
- 1/2 teaspoon brown sugar
- 1/2 teaspoon cumin
- 1/2 teaspoon ginger
- salt and pepper to taste
Directions
- Melt butter in a large stock pot.
- Add vegetables in with melted butter. Mix in butter for 2 minutes.
- Add seasonings into stock pot and mix up vegetables; cook for 4 minutes.
- Add water to stock pot, bring to boil, and the simmer for 15 minutes.
- Remove from heat and let cool. Once cooled add to blender. Serve and enjoy!
